Prior to decanting place the bottle up-right for about 30 minutes. Remove the cork and allow the bottle to stand for a few minutes more, then pour the Port into a clean jug or decanter. Stop pouring the moment you see the first signs of any sediment appearing. The sediment in Vintage Port will settle very quickly at the base of the bottle. Dow’s bottle-matured Ports should be allowed to ‘breathe’ a little prior
to serving. A young Vintage Port will ‘open up’ very soon after decanting, whereas a very fine old Vintage Port will benefit from a few hours in the decanter prior to serving.
